KITCHEN HOODS: meaning, what are they for, types, installation and maintenance

Nowadays it is inconceivable to set up a kitchen without including an exhaust hood, just like setting up a commercial kitchen without a professional extraction hood. The hoods are for home kitchens just as the professional hoods/canopies are for commercial kitchens in catering areas.

If you are in the process of equipping a commercial kitchen for the Horeca sector, this article is for you. Learn more about this essential equipment to purify the air in a kitchen.

What does Hood/Canopy mean?

Any kitchen needs to be ventilated, either naturally with windows or through a ventilation system. In commercial kitchen environments, mechanical ventilation systems that remove addictive air are mandatory.

The Hoods, also known as Canopies, are a professional exhaust and extraction system for hotels and restaurants' kitchens.

What is a Hood/Canopy for?

Playing a key role in any commercial kitchen, the hoods are used to capture, filter and remove odours, vapours, fumes and fats from food preparation.
The canopies also provide fire protection and create a comfortable working environment, removing heat and maintaining a more pleasant ambient temperature.

The hood should be placed on top of the cooker and oven to immediately evacuate the impure air and fats they produce, allowing the kitchen to stay clean. The lack of an exhaust system in a kitchen, besides the harmful effects caused by toxins in the air, leads to the surfaces of the kitchen quickly become dirty and greasy.

Types of Hoods/Canopies

There are 2 types of professional extraction canopies: wall hoods and central/island/ceiling hoods.
Within each typology, there are some variants regarding the construction model/structure. In particular, wall-mounted hoods can be rectangular (cabinet type) or inclined, while central (island) hoods are usually cabinet or canopy type.

Installation and maintenance

Our hoods are easy and quick to install and can be assembled.
The filters are designed to collect all kinds of grease and dirt and over time they get very dirty. It is convenient to clean them frequently, at least once a week, in order to work as efficiently as possible.

Hoods/Canopies produced at PNH

The professional hoods we manufacture are built with the integration in commercial kitchens of the Horeca sector in mind. Their construction is in stainless steel suitable for the catering grade, standardised and carefully tested in order to optimise their performance.

Due to its modular structure, if the desired hood is longer than 3 m, it is supplied in modules with easy connection/union between them.
Within our range of exhaust canopies, we have models with and without integrated motor (optional).
